When the opportunity arose - through my association with Moms Meet - to try several varieties of Once Again Nut Butter, I was excited. We love nut butters in my household. We use almond butter in our Pad Thai-inspired Cookies; I made Homemade Peanut Butter Cups. We use nut butters in savories; we incorporate them into sweets. And, naturally, we use them to make nut butter and jam sandwiches!



I was excited to receive almond butter, sunflower seed butter, peanut butter, and cashew butter from Once Again Nut Butter. My Enthusiastic Kitchen Elf claimed the racoon mascot for himself!


About Once Again Nut Butter...
Once Again Nut Butter is an employee-owned business, based in New York. They have been manufacturing nut butters, seed butters, and honeys since 1976. All of the butters are certified gluten-free, non-GMO, organic, vegan, and kosher. Additionally, they adhere to Fair Trade and Sustainability standards for their all their farm partners and suppliers.

Though we tried them all, I decided to focus on - and share a recipe with - the almond butter. Its only ingredient is organic almonds. Can't beat that. The almonds are dry-roasted and milled to create a tasty, toothy butter that I had a hard time not eating straight from the jar with a spoon.

White Gazpacho

White gazpacho is a classic dish from Spain. Traditionally it's made with bread, almonds, grapes, and cucumbers. The bread acts as a thickener. This version is made with bread, blanched almonds, almond butter, and green grapes. I skipped the cucumber altogether because I didn't have any. Also, next time, my vampire husband asked to cut the garlic. Nonsense!


Ingredients makes 4 servings

  • 2 C gluten-free bread, crusts removed and cubed
  • 1 1/2 C vegetable stock
  • 2 C seedless organic green grapes + more for serving
  • 1/4 C Once Again Organic Almond Butter
  • 3 T olive oil
  • 2 T balsamic vinegar + more for serving
  • 1 T freshly squeezed lemon juice
  • 2 cloves garlic, peeled
  • 1/4 C blanched slivered almonds + more for serving
  • 4 t thinly sliced lacinto kale for serving
  • fleur de sel for serving


Procedure
Place all ingredients together in the bowl of a food processor.  Blend until smooth. You can strain if you wish. I didn't. Chill for at least 30 minutes before serving.

To serve, ladle into a shallow bowl and garnish with 1 T kale, a few grape slices, and slivered almonds. Sprinkle with fleur de sel. Drizzle with vinegar.

Caulibits Crni Rižoto (Croatian Black "Risotto") #Whole30

Last week, I participated in the Wine Pairing Weekend event 'New Year, New Wine." I paired Crni Rižoto with Dingac Vinarija’s Pelješac...and you can read my post: here . I was pouring a Croatian wine and decided to make a traditional Croatian dish. Every seafood restaurant in Croatia has a  Crni Rižoto  (black risotto) on its menu.  Crni Rižoto  is risotto dyed black with squid ink; I used cuttlefish ink for the same effect. However, since arborio rice is not Whole30 compliant, I made a version for myself that used caulibits instead of rice. Ingredients 1 C fish stock (or a combination of fish stock and vegetable stock) 1 T olive oil 1 medium shallots, peeled and minced 1 cloves garlic, crushed and minced 1/4 lb shrimp 1/4 lb squid tubes, cleaned and sliced into rings 1/4 lb scallops 1/4 lb clams, scrubbed 1/4 lb mussels, scrubbed 4 C caulibits, or chopped cauliflower 1 T fresh parsley, minced juice and zest from 1 organic lemon 1 t cuttlefish ink
