Grilled Cabbage Steaks #StPatricksDay

I just discovered a new blogging group that posts recipes around food holidays or just holidays in general: Holiday Fun with Our Blog Friends. Fun!

Since St. Patrick's Day is just around the corner, this group decided it was a great time to celebrate the Irish in all of us, even if there isn't any! There are a lot more ways to celebrate St. Paddy's than drinking green beer. So, Jan from The Tip Garden and Carlee from Cooking with Carlee gathered us to share our best St. Patrick's Day inspired recipes.  There is sure to be something for everyone! Éirinn go Brách!

Grilled Cabbage Steaks

Since I had already done a corned beef and (boiled) cabbage meal for R's robotics team when they came to the house earlier, I decided to try a different cabbage preparation for our family corned beef dinner. I've roasted cabbage steaks in the past. For this, I grilled them. And I used a combination of green and purple cabbage.

I will definitely be doing this again soon. They were delicious and so, so simple. The purple cabbage ended up being more sweet. It was fantastic! I didn't add any salt to these because the corned beef is so salty on its own, but feel free to add to your tastes.

Ingredients

  • 1 head organic green cabbage
  • 1 head organic purple cabbage
  • ¼ C butter, melted
  • freshly ground pepper
  • olive oil for serving

Procedure
Remove the outer layer of the cabbages and slice them into 1" thick steaks.

Heat your grill or griddle. Brush the pan with melted butter and place the steaks on the pan. Cook until the edges begin to darken and the cabbage begins to soften, approximately 5 to 6 minutes. Flip the steaks over and cook for another 5 to 6 minutes.

To serve, sprinkle with freshly ground pepper and drizzle with olive oil. Serve hot.

  1. Yum! I love roasted cabbage but have never tried it grilled. What a great idea!

  2. I have grilled cabbage before to use in a bratwurst salad and it was amazing. Can't think why I haven't thought to use that technique again. Thanks for the reminder, Cam.

Quick Pickled Red Onions and Radishes

If you've been reading my blog for even a short amount of time, you probably know how much I love to pickle things. I was just telling a friend you can pickle - with vinegar - or you can ferment - with salt - for similar delicious effect. The latter has digestive benefits and I love to do that, but when I need that pop of sour flavor quickly, I whip up quick pickles that are ready in as little as a day or two. I've Pickled Blueberries , Pickled Asparagus , Pickled Cranberries , Pickled Pumpkin , and even Pickled Chard Stems ! This I did last night for an upcoming recipe challenge that requires I include radishes. Ummmm...of course I'm pickling them! Ingredients  makes 1 quart jar radishes, trimmed and sliced organic red onions, peeled and thinly sliced (I used a mandolin slicer) 3/4 C vinegar (I used white distilled vinegar) 3/4 C water 3 T organic granulated sugar 1 T salt (I used some grey sea salt) 6 to 8 grinds of black pepper Proce
